We had a pretty low key weekend and we loved every minute of it. I usually love to be on the go but more and more I prefer this type of weekend over the busy ones. Fall seems to be the perfect time to cuddle in at home. My husband put a television outside on our back porch so after soccer games we rush home to watch football all day. As you can see it works perfect for movie night as well. (The porch is clearly unfinished but we are getting there)
Our weekend of football and fall weather would not be complete without a crockpot of chili so I want to share with you one of my favorite chili recipes. I found it years ago in a Rachel Ray magazine and it is soooo good. The recipe doesn’t call for using the crockpot but I’m all about setting it on low/warm and forgetting about it so I tweaked it a little bit. I’ll share my changes with you and link you to the printable version.

Now that you can see the recipe, here is what I do differently. Heat the oil in a skillet and add the beef. Cook for 7-9 minutes or until mostly browned. Add onion, spices and garlic. Mix well and cook for 2-3 minutes. Meanwhile, add the beans and tomatoes to your crockpot. Add your beef mixture to the crockpot and season with salt and pepper to taste. I cook on low for a few hours (just enough time for the flavors to mix and everything to be hot) and then switch to warm.
I usually have different kinds of cheese and chips for everyone to choose from. It is the perfect recipe for fall weather and football watching. So add this to your menu for the week and let me know what you think!
