One thing I love about fall is the permission to indulge in comfort soup and chili.
#1 reason: They are super yummy!
#2 reason: I can toss everything into the crockpot and forget about it. My husbands’ work schedule is rarely the same so having something ready no matter what time he walks through the door is a major plus.
#3 reason: There is almost always leftovers for lunch or round 2 for dinner. Can’t beat a 2 for 1!
I have several awesome soup recipes that I make on a regular basis. Since we are going into fall I’ll be sure to share all of them over the coming months. The first one, we actually had last night for dinner. Simple Potato Corn Chowder. It is so good and does well on its own. Sometimes I pair it with a salad and crunchy bread but if it is a busy weeknight crackers do just fine. A lot of these recipes I have found on other blogs so I’ll be linking you to that website for the complete recipe.
This recipe is technically not a crockpot recipe but that is the only way I make it and it turns out perfectly.
First I sautee’ the smoked sausage in the stockpot with the melted butter.
I transfer the sausage to the crock pot and add the celery, onions, potatoes and garlic to the stove to cook a little.
I could never make this without my super cute helper.
Making the broth is super simple.
Toss it all and the remaining ingredients in the crockpot and let it cook for 3-4 hours.
