Today I wanted to share one of my go to meals when Trae is working late. It is an easy, low budget weeknight meal and makes good leftovers for lunch the next day. So if you are headed to the grocery soon, make sure to add this to your list. I’m sure your family will love it.
Here is what you will need.
¼ lb margarine
1 ½ cups minute rice
1 can cream of mushroom soup
4 boneless skinless chicken breasts
1 package Lipton onion soup mix
To start melt your margarine and pour in a 13×9 baking dish. Add the rice and soup and mix it all together. Lay the chicken on top and pour one soup can of water over everything. Sprinkle the Lipton onion soup mix on top.
Cover your dish with foil and bake at 350 degrees for 1 ½ hours. Before I could take a pretty picture for this post, my husband helped himself to dinner. Ha ha! So this is as good as it gets for the after picture. I’ll make it again soon and update the picture but for now this works and you have the recipe for your next shopping trip.
I serve this with a salad or green beans. I have to get my “something green” in for the day. Here is a printable version to make things a little easier.
